Daging Opor Hijau (Eid Special)
Episode 4 – Raya Series by Chef Wan
A rich, aromatic green beef opor with Calpis replacing part of the coconut milk for a healthier twist.
Bahan-Bahan:
– 60 ml minyak
– 800 ml santan pekat (Chef Wan recommends reducing by 50% and replacing with Calpis Original)
– 1 kg daging (bahagian paha, dihiris nipis)
– 50 biji terung pipit
– 1 sudu teh sos ikan
– Jus dari 1 biji limau kasturi
– 8 tangkai daun selasih Thai
– Garam secukup rasa
– 1 sudu teh gula melaka
Bahan Dikisar Halus:
– 12 ulas bawang merah
– 4 batang serai
– 2 cm halia
– 2 cm lengkuas
– 2 ulas bawang putih
– 4 tangkai daun ketumbar (termasuk batang bawah)
– 3 helai daun limau purut
– Kulit dari 1 biji limau purut
– 20 biji lada hitam
– 8 tangkai cili hijau (dibuang biji)
– 10 tangkai cili padi hijau
– 2 sudu teh belacan
– 1 sudu besar serbuk biji ketumbar
Cara Penyediaan:
1. Panaskan minyak dalam periuk dan tumis bahan kisar sehingga wangi.
2. Masukkan santan (dan Calpis jika digunakan). Didihkan bersama daging dan limau selama 5 minit.
3. Akhir sekali, masukkan daun selasih dan perasakan.
